Cook like a pancake – ready in 5 minutes. Recipe makes 1 x medium pizza base. Best to use a cast iron pan (base around 23cm) so you can pop it straight into the oven to finish the pizza. You can totally replace half the chickpea flour with spelt flour if you feel the chickpea taste is too overpowering… have tried this and works just as well.

1 Cup Chickpea Flour (Besan)

1/4 teaspoon Himalayan Salt

1 1/2 teaspoons Extra Virgin Olive Oil
- 2/3 Cup Filtered Water
Method

Preheat oven to 180C conventional.

Preheat cast iron pan.

In a large bowl, sieve and mix together the chickpea flour and salt.

Add and stir through Olive Oil and Water with a wooden spoon, until all mixed well, similar to a thick pancake consistency.

Pour a little coconut / olive oil in the cast iron pan – heat through, then pour in the pizza base mixture.

Cook for a few minutes – or just long enough to be able to flip, then cook on the other side.

Flip again, top with pizza sauce, cheese and favourite toppings, then place pan straight into the oven.

Bake until top is nice and crispy to your liking. Serve while still fresh and hot, doesn’t keep well as leftovers the next day :/
