Choc Date Coconut Balls

Pop everything into a food processor, and voila!

  • 33 Dates (soak in boiling water for at least 30 minutes, then drain)
  • 1 Cup Almond Meal
  • 1/2 cup Desiccated Coconut
  • 1/3 cup Cocoa Powder
  • 1/3 cup Extra Virgin Coconut Oil (solid)
  • 1 Tablespoon Chia Seeds
  • 1/4 cup Mixed Nuts / Seeds
    (I usually use sunflower seeds, and a small amount of hemp seeds – this has a strong flavour so use sparingly)
  • Plus extra Desiccated Coconut for rollingĀ 

Method

  1. Process all dry ingredients in a food processor (so everything minus the coconut oil), on a low setting. It should only take about 20 seconds to reach a crumbly consistency.
  2. Melt coconut oil in microwave on 80% power, and slowly add to food processor while it is running on low.
    If you don’t have a pouring spout, then add a little at a time and pulse in between.
  3. Combine until it all comes together in a single mass.
  4. Transfer to a bowl and stand for 20 minutes for chia seeds to soften.
  5. Roll into marble sized balls. Roll through extra desiccated coconut to coat.


STORAGE:
Place in an airtight container and keep for up to a week in the fridge.
FREEZE: For up to 1 month.
