Chocolate Cake in a Mug

Base recipe not bad – best served with whipped cream / or custard.

Ingredients

Base recipe

  • 1/4 cup wheat based flour
  • 1 1/2 Tablespoons Cocoa Powder
  • 1 1/2 Tablespoons Coconut Sugar
  • 1/4 teaspoon Baking Powder
  • A few cracks of Himalayan Salt

  • 1/4 cup Milk
  • 2 Tablespoons melted Virgin Coconut Oil 
  • 1/4 teaspoon Vanilla Extract

Next Time… (adjustments)

  • 1/4 cup wheat based flour
  • 1 Tablespoon Cocoa Powder
  • 1 Tablespoon Almond Meal
  • 1/4 teaspoon Baking Powder
  • 1 Tablespoon Coconut Sugar
  • Small sprinkling of Monk Fruit Powder
  • a few cracks of Himalayan Salt

  • 1/4 cup + 1 Tablespoon Milk
  • 2 Tablespoons Coconut Oil
  • Small sprinkling of dark chocolate chips

Method

  1. Combine all dry ingredients in a small bowl (it’s just easier than doing in the mug).

  2. Add milk a little at a time and continue stirring until all combined and smooth.

  3. Add melted Coconut Oil and keep stirring until smooth.

  4. Add Vanilla Extract and stir well.

  5. Place in microwave at for 60 – 90 seconds. 
    All microwaves are different, adjust as needed.
