3-4 Quality Sausages
- 3 Tablespoons Olive Oil
- 2 onions, sliced

2-3 cloves garlic, squished & chopped
- 1 Granny Smith Apple, diced
Pantry Staples for Sauce
- 1/4 Cup quality Tomato Sauce
- 1/4 Cup quality BBQ Sauce
- 2 Tablespoons Coconut Sugar
- 2 Tablespoons Worcestershire Sauce
- 1 Tablespoon Tamari Sauce
- A few good cracks of Pepper
- A few pinches of Dried Thyme
- 400g Can Diced Tomatoes
Method
- Pan fry Sausages until just cooked. Remove and set aside. This is a good time to get the potatoes cooking for mash.
- In a stainless steel wok / large pot (with a lid), gently saute onions (add garlic and apple towards the end) until soft and golden. This can take around 10 minutes, so prepare the sauce by placing all ingredients into a bowl and mixing well. Diced tomatoes can go straight into the wok / pot later.
- Once the onions are golden, add sausages and sauce, stir well, replace lid and let simmer for 10-15 minutes, stirring occasionally.
- Serve on top of mash.
