Made right in the blender – let rest for 10 minutes before cooking. Makes 8 small pancakes.
Ingredients
Place straight in blender:
DRY

1 2/3 Cup Rolled Oats (5 x 1/3 cup)

1 teaspoon Coconut Sugar

2 teaspoons Baking Powder

Few cracks of Salt
WET

1 Egg

2/3 cup (heaped) Natural Greek Yoghurt

2/3 cup Milk (alternative like Almond milk is great)

1/2 teaspoon Vanilla Essence (optional)
Method

Blend on high for 1 minute – until a smooth consistency. Then let rest for 10 minutes (this is an important step to ensure the oats soak up the liquid and thickens).

Preheat a cast iron pan. Add butter, then add about 1/3 cup of pancake mix to cook – depending on pan size, you should be able to get 2 pancakes in to cook at the same time.

Cook until you see the top starting to bubble, about 2-4 minutes. Then flip, cook, and repeat.

Serve immediately with yoghurt / maple syrup / fruit.
Optional Extras
- Place blueberries / or chocolate chips straight on top of the batter, as soon as you pour it into the pan. Cook together.
