2 Cups (360g) white Rice (we use Jasmine)
400ml Can of Coconut Milk
Dash of Coconut Cream (1-2 Tablespoon)
1/2 Cup (125ml) Water
- 1/2 teaspoon salt
Method
- Rinse rice – then soak in filtered water for as long as possible – minimum 15 minutes. Start this process in the morning if you know you’ll be making this dish. Rinse super well.
- Add all ingredients to a medium saucepan, over medium to high heat.
- Bring it to a simmer so the entire surface of the liquid is rippling (not just the edges), give it ONE stir (not more!), place lid on and immediately turn heat down to LOW.
- Leave for 14 minutes.
- Remove from heat, and rest, undisturbed, for 10 minutes.
