Ingredients

250g Pea Shoots (a punnet of microgreens)

Dash of Peanut Oil (or other high smoke point oil)
- 3 – 4 cloves Garlic (squished and chopped)

1/2 Tablespoon minced Ginger

1 Tablespoon Chicken or Vegetable Stock

Sprinkling of Pine Nuts (lightly toasted)
- Season with Salt
Method

Remove as much of the thick stems from the pea shoots as per your preference.
Prepare all other ingredients as the cooking is going to happen quickly. -
Pre-heat a stainless steel wok or iron pan.

Add oil, and fry the garlic and ginger until fragrant – keep stirring so as not to burn, then immediately add the pea shoots, and stir gently to coat in the oil.

Add the tablespoon of stock, and season with salt. Stir gently a few more times and remove from heat. Place on serving dish and sprinkle with roasted pine nuts. Serve immediately.
