With a tangy sauce of honey & lemon! Yum
Ingredients
Prep ahead of time

1 or 2 Sweet Potatoes, depending on quantity you’re making
(diced into small cubes) -
A few good handfuls of fresh Spinach
- Chopped Nuts – almonds or walnuts go well here
- 1/2 Red Onion – sliced thin
The Sauce

2 Tablespoon lemon Juice

5 Tablespoon Olive Oil

1 1/2 Tablespoons Honey

1 teaspoon Mustard
-
1 teaspoon Mayonnaise
(you can sub 2 teaspoons of dijon mustard here if you have it)

1 Garlic clove – crushed
- Season with Salt and Pepper
Method

Preheat you oven to 200C conventional.

Dice up your sweet potato, and rub with olive oil, then season with salt and pepper. Roast for 20-25 minutes, until golden and soft but not falling apart.

While that’s happening, mix your sauce ingredients and whisk well.

Place spinach, sliced onions and nuts into a serving bowl, toss with a little of the sauce dressing.

Once the roasted potatoes have cooled down, mix together with the rest of the salad, and add more dressing as required.
Optional extras – Feta, dried cranberries, rocket.
