The most delicious Butter Chicken

Make Marinade by conbining:

  • 600g Chicken chopped into large chunks.
  • 1 cup Greek Yoghurt
  • 2 Tbsp Lime Juice
  • 2 Tbsp finely grated ginger.
  • 2 Tbsp minced Garlic
  • 2 Tbsp Garam Massala
  • 1 1/2 tsps Turmeric powder.
  • 4 tsp Ground cumin
  • 2 tsp Chili flakes
  • Salt to taste

Combine in freezer bag. Leave in fridge overnight.

Fry up chicken with marinade in 3 tbsp of Butter. Once chicken is cooked through, add 1 1/2 cup of Passata. Cook for a few minutes – then add 1 cup Thickened Cream. Stir through. Then remove from heat and cover.

Make Cauliflower Rice by grating with a cheese grater, and fry off until it starts to get soft.
