Make Marinade by conbining:
- 600g Chicken chopped into large chunks.
- 1 cup Greek Yoghurt
- 2 Tbsp Lime Juice
- 2 Tbsp finely grated ginger.
- 2 Tbsp minced Garlic
- 2 Tbsp Garam Massala
- 1 1/2 tsps Turmeric powder.
- 4 tsp Ground cumin
- 2 tsp Chili flakes
- Salt to taste
Combine in freezer bag. Leave in fridge overnight.
Fry up chicken with marinade in 3 tbsp of Butter. Once chicken is cooked through, add 1 1/2 cup of Passata. Cook for a few minutes – then add 1 cup Thickened Cream. Stir through. Then remove from heat and cover.
Make Cauliflower Rice by grating with a cheese grater, and fry off until it starts to get soft.
